Effect of various roasting, extraction and drinking conditions on furan and 5-hydroxymethylfurfural levels in coffee

Summary: The study quantified levels of furan and 5-HMF in coffee samples, considering factors such as species/origin of beans, roasting conditions, extraction method, and additives. Results showed significant variations in furan and 5-HMF levels based on roasting conditions and extraction methods, with Robusta coffee and espresso extracts having the highest 5-HMF concentrations.

The relationship between acrylamide and various components during coffee roasting and effect of amino acids on acrylamide formation

Summary: This study analyzed the level of acrylamide in Robusta coffee beans as the temperature increased in a hot air roaster. The relationship between acrylamide and precursor substances was closely examined. Some amino acids were found to have either promoting or inhibiting effects on acrylamide production.
