Summary: The study observed that feeding pigs RAC led to higher muscle pH early postmortem, reduced lactate levels, and decreased glycogen content. Surprisingly, including RAC in the diet for 4 weeks increased lightness values. These results raise questions about the role of glycolytic flux in pork quality development.
