Antibacterial mechanism of thymol against Enterobacter sakazakii

Lu Tian et al.

Summary: Thymol has a broad-spectrum antibacterial effect, and this study revealed its antimicrobial mechanism against Enterobacter sakazakii by disrupting cell membranes and interfering with intracellular homeostasis. The results suggest the potential of thymol to prevent bacterial contamination by E. sakazakii in the food industry.

Synergistic Effect of Mandarin Peels and Hesperidin with Sodium Nitrite against Some Food Pathogen Microbes

Gouda H. Attia et al.

Summary: The study demonstrates synergistic and additive effects between hesperidin from citrus fruit peel extract and NaNO2, showing potential for application as a food preservative. Gaining benefits from the biological and nutritive values of natural bio-preservatives like hesperidin can help reduce the concentration of synthetic chemical preservatives like NaNO2 in food products.
