Functional characterization of plant-based protein to determine its quality for food applications

Amino acid profile is the most important parameter for protein quality evaluation, while properties like molecular weight distribution, structural morphology, and thermal stability are also essential. Various functional properties and in vitro digestibility are important factors for identifying suitable applications for plant proteins in human nutrition, as emerging sources of quality plant proteins continue to be explored.
