Role of thermal and non-thermal drying techniques on drying kinetics and the physicochemical properties of shiitake mushroom

Summary: The study compared the effects of thermal and non-thermal drying techniques on the quality of shiitake mushrooms. Non-thermal drying resulted in attractive color and structure but had the longest drying time. Thermal drying, especially infrared hot air convection drying, was found to be a potential method to obtain high-quality dried shiitake mushrooms with desirable physicochemical properties.

Summary: The study found that CMP improved insulin resistance and energy metabolism, suppressed kidney dysfunction, relieved renal oxidative stress and inflammation in diabetic nephropathic mice. Western blot results suggested CMP reversed renal injury by modulating the PTEN/PI3K/Akt and Wnt-1/beta-catenin pathways. The typical characterizations of CMP with galactose major monosaccharide-compositions and proper molecular weight possibly contributed to its anti-diabetic nephropathic effects.
