Combination of light and oxygen accelerates formation of covalent protein- polyphenol bonding during chill storage of meat added 4-methyl catechol

Mohd Asraf Mohd Zainudin et al.

Summary: The study found that the formation of cysteine-4-methylcatechol adduct increased in meat added with 4-methylcatechol under light exposure, leading to a significant decrease in thiol concentrations. Additionally, samples added with 4MC showed loss of myosin heavy chain and an increase in larger protein polymers.

Accessing the Next Generation of Synthetic Mussel-Glue Polymers via Mussel-Inspired Polymerization

Jana M. Krueger et al.

Summary: The study utilized the formation of cysteinyldopa in proteins to inspire a chemical pathway towards mussel-adhesive mimics. By using MIPoly and chemically diverse bisphenol monomers oxidizable to bisquinones, polymers with thiol-catechol connectivities were successfully synthesized. These polymers showed competitive dry adhesive strength with commercial epoxy resins and promise easy scalability and customization for adhesives.

Unraveling the Structure and Function of Melanin through Synthesis

Wei Cao et al.

Summary: Melanin is a natural biomaterial with various functions found in living organisms, classified into different types based on chemical precursors. Despite its complexity and diversity in chemical structure, synthetic mimics have been used to study its structure-function relationships. Efforts are being made to elucidate biosynthetic pathways and characterize melanin materials for potential new opportunities in synthetic materials.
