Effects of packaging methods on the quality of heavy metals-free preserved duck eggs during storage

Yuting Wang et al.

Summary: The study systematically studied the effects of 5 packaging methods on the quality of heavy metals-free preserved eggs during storage. Among the methods, uncoated preserved eggs suffered the most serious moisture loss and mass loss. The best preservation performance was found in the paraffin coating and vacuum packing methods, while plastic bag packing showed the worst preservation performance.

Electrolyzed Oxidizing Water and Its Applications as Sanitation and Cleaning Agent

Attia Iram et al.

Summary: Electrolyzed oxidizing water (EOW) is a promising novel antimicrobial agent in the food industry, with applications ranging from drinking water to hard surfaces. Different pH levels of EOW have specific applications, with slightly acidic EOW being considered more effective. Research has also explored the use of supplemental physical and chemical treatment methods to enhance the antimicrobial properties of EOW.

Recent advances on research of electrolyzed water and its applications

Lin Zhao et al.

Summary: Electrolyzed water is a promising sterilization agent in the food industry, with strong broad-spectrum bactericidal efficiency, but its exact antimicrobial mechanisms are yet to be determined, limiting its widespread application. Recent studies focus on exploring the germicidal effects and antimicrobial mechanisms of electrolyzed water on microorganisms, as well as discussing the enhancement of food safety and quality through the combination of other technologies.
