Protein Hydrolysate from Splendid Squid (Loligo formosana) Fins: Antioxidant, Functional Properties, and Flavoring Profile

Summary: Protein hydrolysates from splendid squid fins with different degrees of hydrolysis were prepared and characterized. The results showed that increasing the degree of hydrolysis increased the yield and protein content, but reduced the lightness of the hydrolysates. Hydrolysates with a degree of hydrolysis above 10% had high solubility and improved foaming properties. The antioxidant activities increased with increasing degree of hydrolysis, except for metal chelating activity and DPPH radical scavenging activity. Hydrolysates with a degree of hydrolysis of 40% had peptides with smaller molecular weight. This study suggests that hydrolysates from squid fin could be used as a nutrient with flavoring characteristics and antioxidant properties for food applications.

Effect of Psyllium (Plantago ovata Forks) Husk on Characteristics, Rheological and Textural Properties of Threadfin Bream Surimi Gel

Summary: The addition of psyllium husk powder at different concentrations had significant effects on the gelling properties of threadfin bream surimi. While 1% addition increased breaking force, higher concentrations decreased elasticity and deformation. Protein patterns were not affected, but changes in network structure and functional groups were observed with the addition of psyllium husk powder. Overall, sensory evaluation showed that surimi with 1-3% psyllium husk powder had similar likability to the control group, indicating potential for improvement in gelling properties.
