Novel approaches based on ultrasound for spray drying of food and bioactive compounds

Summary: Ultrasound assisted spray drying is widely used in the food and pharmaceutical industries for increasing the stability of compounds involved. Although it has shown promising results in the pharmaceutical sector, its application in the food industry is still in the development stage. Ultrasonic spray drying offers several advantages over conventional methods, such as better size distribution and compact designs.

Quality Assessment of Honey Powders Obtained by High- and Low-Temperature Spray Drying

Summary: This study compared the quality of rapeseed and honeydew honey powders obtained by traditional high-temperature spray drying and innovative low-temperature spray drying methods. The results showed that powders obtained by the low-temperature spray drying method had higher polyphenol content, antioxidant activity, and aromatic compounds compared to powders obtained by the traditional method. Additionally, honeydew honey had higher levels of polyphenols, antioxidant activity, and composition of aromatic compounds than rapeseed honey. The production method was found to have a greater impact on the final properties of powders than the type of honey.

Although still in the early stages, the nano spray dryer technology has shown promising results in drying and encapsulating various food ingredients.

Effect of spray drying on the polyphenolic compounds present in purple sweet potato roots: Identification of new cinnamoylquinic acids

Summary: The impact of spray drying on various polyphenolic compounds in the root of purple-fleshed sweet potatoes native to Peru was investigated using HPLC-QTOF-MSMS. The study identified nine anthocyanins and twenty-nine cinnamoylquinic acids, with significant losses of polyphenols observed during the spray drying process. Among the compounds, mono-CiQAs with feruloyl moieties and mono acylated peonidin derivatives with p-hydroxybenzoic acid were the least affected.

Dehumidified Air-Assisted Spray-Drying of Cloudy Beetroot Juice at Low Temperature

Summary: This study investigated the physicochemical properties of powders obtained by spray drying cloudy beetroot juice using dehumidified air with or without carriers. Results indicated that drying without carriers at low temperatures (90 or 130 degrees C) was possible and resulted in powders with satisfactory properties. The addition of carriers led to lower betalain loss but lower overall process yields compared to powders without carriers. Best process yields were achieved for powders without carriers at 130 degrees C and 90 degrees C.
