Improving the viability of powdered Lactobacillus fermentum Lf01 with complex lyoprotectants by maintaining cell membrane integrity and regulating related genes

Effects of freeze drying in complex lyoprotectants on the survival, and membrane fatty acid composition of Lactobacillus plantarum L1 and Lactobacillus fermentum L2

Summary: This study investigated the impact of freeze-drying protective agents on the viability, survival, and membrane fatty acid composition of Lactobacillus plantarum L1 and Lactobacillus fermentum L2. The results showed that using a solution containing four protectants significantly increased the survival rate of L. plantarum L1, while a solution containing four specific protective agents improved the survival rate of L. fermentum L2. Furthermore, the presence of all four protective agents during freeze drying maintained cell membrane integrity and increased ATPase activity.

Summary: This experiment investigated the effects of the antibiotic Ciprofloxacin on key enzymes and intracellular metabolites of Lactobacillus plantarum DNZ-4. The results showed that Ciprofloxacin significantly decreased the activity of certain enzymes and caused changes in intracellular fatty acids, carbohydrates, and amino acids. These findings are important for the development of effective probiotics preparation products.

Homology- and cross-resistance of Lactobacillus plantarum to acid and osmotic stress and the influence of induction conditions on its proliferation by RNA-Seq

Summary: This study demonstrated increased homology- and cross-resistance of Lactobacillus plantarum L1 and Lactobacillus plantarum L2 to acid and osmotic stress, along with improved survival rates of live bacteria after induction treatment. Furthermore, L. plantarum L2 showed a significant increase in viable bacteria count under sublethal treatment conditions compared to the control group, with upregulation of genes related to membrane transport, amino acid metabolism, nucleotide metabolism, and cell growth. These findings will contribute to promoting high-density cell culture of starter cultures production in the fermented food industry.
