Invited review: Microfiltration-derived casein and whey proteins from milk

B. G. Carter et al.

Summary: Milk can be fractionated into various components using microfiltration technology, offering unique functional and nutritional benefits for new product development. Microfiltration shows promise in improving efficiency and quality in dairy production, particularly in cheese making. These new ingredients could provide unique functional and flavor properties in food applications, presenting potential growth opportunities in response to consumer demand for safe and nutritious foods.

Ready-to-drink protein beverages: Effects of milk protein concentration and type on flavor

Kenneth G. Vogel et al.

Summary: This study investigated the impact of protein concentration and milk protein ingredients on sensory properties of vanilla ready-to-drink protein beverages. Higher protein content led to increased astringency and sensory viscosity, while decreasing vanillin flavor. Beverages with higher serum protein content tended to have higher sulfur volatiles and lower vanillin concentrations.
