Effects of super-chilling storage on shelf-life and quality indicators of Coregonus peled based on proteomics analysis

Xinru Fan et al.

Summary: The study found that super-chilling storage at -2 degrees Celsius effectively suppressed softening and K-value increase in Coregonus peled muscle compared to storage at 0 degrees Celsius. Muscle hardness was higher at -2 degrees Celsius, and impedance changes were slower at this temperature. Proteomics analysis revealed differential abundance of proteins related to cellular components, molecular functions, and collagen digestion pathways, suggesting a potential link to muscle textural properties and freshness maintenance.

Growth interferences between bacterial strains from raw cow's milk and their impact on growth of Listeria monocytogenes and Staphylococcus aureus

J. Hahne et al.

Summary: This study found complex growth interactions between bacterial populations in raw milk, with both enhancing and inhibiting effects observed. Particularly under cold storage conditions, these growth interferences may impact the structure of raw milk microbiota, potentially affecting the prevalence of specific foodborne pathogens.

Spoilage-related microbiota in fish and crustaceans during storage: Research progress and future trends

Shuai Zhuang et al.

Summary: The microbiota composition of fish and crustaceans plays a crucial role in their spoilage process, which can be influenced by various factors. Quality control techniques, especially plant-derived preservatives, have shown efficient effects on inhibiting spoilage bacteria and regulating microbiota composition. Novel preservation techniques and hurdle technologies are expected to achieve comprehensive inhibitory effects on spoilage bacteria, while further elucidating spoilage mechanisms using omics technologies is recommended for future studies.
