Effectiveness of ice structuring protein on the myofibrillar protein from mirror carp (Cyprinus carpio L.) during cryopreservation: Reduction of aggregation and improvement of emulsifying properties

Summary: The study investigated the changes in aggregation behavior and emulsifying properties of myofibrillar protein from mirror carp induced by oxidation during frozen storage with the effect of ice structuring protein. The addition of ice structuring protein showed to increase water-holding capacity and emulsifying properties initially, but then decrease, while also inhibiting oxidation and aggregation of the protein. The most significant results were seen with 2.0 g/L ice structuring protein.
