Degradation kinetic modeling of bioactive compounds and enzyme activity in wheat germ during stabilization

Summary: The study found that heat treatment at 120 degrees Celsius for 20 minutes was the best processing condition to stabilize raw wheat germ and preserve its valuable bioactive compounds and antioxidant activity. The models developed in this study may be useful for designing different heat treatment conditions.

Healthy beef burgers: Effect of animal fat replacement by algal and wheat germ oil emulsions

Summary: This study aimed to reformulate beef burgers by replacing pork backfat with algal and/or wheat germ oils emulsions, resulting in improved nutritional characteristics such as increased polyunsaturated fatty acid concentrations without compromising technological or sensory properties. The addition of oils emulsions increased protein levels and decreased lipid proportions, with algal oil burgers being able to claim high omega-3 content. Sensory differences were observed in flavor and overall quality parameters, with formulations containing algal oil being similar to the control group.

Lycopene-rich cream obtained via high-pressure homogenisation of tomato processing residues in a water-oil mixture
