A review of the interaction between anthocyanins and proteins

Jia Li et al.

Summary: The interaction between anthocyanins and proteins can improve the stability, nutritional and functional properties of the complex. The structure of the complex changes, including an increase in alpha-helix and beta-sheet content, a decrease in fluorescence intensity, and a shift in amide regions. The stability, antioxidant, digestion, absorption, and emulsification of the complex are improved.
