Preparation and characterization of iron-chelating peptides from whey protein: An alternative approach for chemical iron fortification

S. Athira et al.

Summary: This study explores the use of whey protein derived iron-chelating peptides as a potential alternative for chemical iron fortificants. Results show that these complexes can enhance iron absorption and bioavailability, making them suitable for food products and iron supplements.

Functionalization of whey protein isolate fortified with blackcurrant concentrate by spray-drying and freeze-drying strategies

Gang Wu et al.

Summary: The study involved combining whey protein isolate with blackcurrant concentrate through spray-drying and freeze-drying techniques to develop novel protein ingredients. It was found that blackcurrant concentrate significantly changed the color profiles of whey protein isolate, and SWB had higher total phenolic content, total anthocyanin content, and encapsulation efficacy compared to FWB. This research suggests that whey protein encapsulated-blackcurrant concentrate could be an innovative food product with improved nutritional profiles.

Characterization of iron reducibility of soy protein amyloid fibrils and their applications in iron fortification

Ning Xiang et al.

Summary: Iron deficiency is a common nutritional disorder, and iron fortification using soy protein amyloid fibrils has been found to be effective. Soy glycinin (11S) showed the most significant effect in reducing Fe (III) to the more bioavailable Fe (II) state, while soy 13-conglycinin (7S) showed optimal results in generating iron nanoparticles on the fibrils in situ. The resulting fibril-iron nanoparticle hybrids were highly dispersible in various liquid foods without causing noticeable color changes.

Application of whey protein isolate fibrils in encapsulation and protection of β-carotene

Chao Zhang et al.

Summary: In this study, protein fibrils were prepared from whey protein isolate fibrils (WPIF) to protect and deliver beta-carotene (BC), showing that the main interactions between WPIF and BC were through hydrogen bonding and hydrophobic interaction. The encapsulation efficiency of treated WPIF24 was significantly increased, and simulated gastrointestinal release demonstrated that BC encapsulated by WPIF24 reached maximum release in the simulated intestine.

Physicochemical, emulsifying, and interfacial properties of different whey protein aggregates obtained by thermal treatment

Yuting Fan et al.

Summary: This research compared the interfacial properties of different whey protein isolate aggregates, including nanoparticles and nanofibrils, and found that nanofibrils exhibited the highest emulsifying activity and stability at pH 3.0. Low salt concentrations were shown to increase the emulsifying properties of proteins. The interfacial tension of protein molecules showed a negative correlation with emulsifying activity indices, regardless of protein types.
