Summary: The present study investigated the electrokinetic behavior of lecithin-stabilized oil/water emulsions in the presence of chitosan oligosaccharides, revealing the influence of different degrees of acetylation on the properties of chitosan. The experimental results confirmed the predominant contributions of hydrophobic and electrostatic interactions between chitosan monomers and the lecithin-covered droplet surface, depending on the degree of acetylation.
