The interactions of wine polysaccharides with aroma compounds, tannins, and proteins, and their importance to winemaking

Hayden R. Jones-Moore et al.

Summary: Polysaccharides in wine play a crucial role in modulating astringency, aroma volatility, and foaming by interacting with other wine components. Their interactions with tannins and proteins affect the clarity and stability of finished wines, making them important for overall wine quality.

Application of Vine-Shoot Chips during Winemaking and Aging of Malbec and Bonarda Wines

Martin Fanzone et al.

Summary: This study investigates the feasibility of using vine-shoot chips during winemaking and aging, and evaluates their chemical and sensory impact on Malbec and Bonarda wines. The results show that vine-shoot chips had different effects on varieties during winemaking, but mainly influenced sensory attributes during aging, enhancing the complexity of the wines in terms of aroma and mouthfeel. The proposed technology could be a simple and cost-effective tool for producing high-quality red wines.

Effect of different pre-treatment maceration techniques on the content of phenolic compounds and color of Dornfelder wines elaborated in cold climate

Aneta Wojdylo et al.

Summary: This study investigated the effects of different pre-treatment maceration techniques on the content of phenolic compounds and antioxidant capacity of red wine made from Dornfelder grapes. The results showed that microwave pre-treatment led to the highest content of total phenolics and antioxidant activity. There was a positive correlation between total phenolics and antioxidant activity, which decreased after fermentation and maturation.

A Review on Stems Composition and Their Impact on Wine Quality

Marie Blackford et al.

Summary: Research has shown that using grape stems has the potential to enhance the aromatic complexity and freshness of wines, but there is a lack of specific studies on the impact of compounds extracted from stems. Various factors, such as grape variety, stem state, and incorporation method, influence the effect of stems on wine quality.

Olfactometric and sensory evaluation of red wines subjected to ultrasound or microwaves during their maceration or ageing stages

Carlota Sanchez-Cordoba et al.

Summary: This study investigated the effects of extraction techniques such as ultrasound or microwaves on the aroma of red wines. While pre-fermentative treatment with microwaves or ultrasound did not significantly modify the sensory profile, the application of these energies during the ageing phase showed positive trends. Ultrasound during ageing resulted in greater contribution of red fruits, aromatic intensity, and wood compared to microwaves, with Spanish oak chips providing more volatile compounds and less undesirable aromas than French oak, preferred for their aromatic intensity and wood descriptors.

Effect of Microwave Maceration and SO2 Free Vinification on Volatile Composition of Red Wines

Raquel Munoz Garcia et al.

Summary: Microwave treatment in grape maceration increases the content of varietal compounds in wines, enhances fermentation kinetics, and improves sensory quality, especially in wines produced without SO2. This method has the potential to enhance wine aroma and reduce the use of SO2.
