Mannitol and erythritol reduce the ethanol yield during Chinese Baijiu production

Summary: Chinese Baijiu is prepared using multiple microbial strains and complex metabolites through simultaneous saccharification and fermentation. Filamentous fungi and Bacillus strains were found to produce polyols that inhibit ethanol production during Baijiu fermentation. Further research on the impact of polyols on Baijiu production is recommended.

High-accuracy long-read amplicon sequences using unique molecular identifiers with Nanopore or PacBio sequencing

Summary: High-throughput amplicon sequencing of large genomic regions remains challenging for short-read technologies. Here, a new approach combining unique molecular identifiers (UMIs) with Oxford Nanopore Technologies (ONT) or Pacific Biosciences circular consensus sequencing was reported, achieving high-accuracy single-molecule consensus sequences. The method was successfully applied to sequence ribosomal RNA operon amplicons and genomic sequences of microbial communities, showing a very low chimera rate.

Sugar profile regulates the microbial metabolic diversity in Chinese Baijiu fermentation

Summary: This study investigated the regulation of sugar profile on microbial diversity and metabolism in Chinese Baijiu fermentation using sorghum as raw material. Glucose, fructose, and arabinose were identified as key sugars driving microbial and metabolic diversity during fermentation. The metabolic diversity significantly increased with optimized levels of these sugars, providing a strategy to control microbial metabolism and improve the quality of fermented foods.

Analysis of microbial diversity and functional differences in different types of high-temperature Daqu

Summary: This study found that the bacterial community in high-temperature Daqu is mainly composed of thermophilic bacteria, and there are significant differences in the bacterial community structure among different types of high-temperature Daqu. The results of microbiome phenotype prediction using BugBase and bacterial functional potential prediction using PICRUSt indicate that bacteria from different types of high-temperature Daqu have similar functions and metabolisms in the transport and decomposition of amino acids and carbohydrates.

The Xizhoumi No. 25 muskmelon showed better ability to retain its original aroma and inhibit the development of off-odors compared to the Queen muskmelon, which displayed more off-flavors and unpleasant odors after heating.

Storage period affecting dynamic succession of microbiota and quality changes of strong-flavor Baijiu Daqu

Summary: The study found that the physicochemical properties and enzymatic indices of Chinese Baijiu Daqu will be affected by the storage period, with different microbial communities dynamics during storage. The effective storage period for the two types of Daqu were determined to be 60-210 days for M-Daqu and 60-180 days for T-Daqu based on the variation trends.
