Evaluating the changes in phytochemical composition, hypoglycemic effect, and influence on mice intestinal microbiota of fermented apple juice

Xiaowei Wang et al.

Summary: Fermentation of apple juice alters its chemical composition and enhances its hypoglycemic and antioxidant activities. Fermented apple juice improves fasting blood glucose and insulin levels, regulates blood lipid metabolism, restores damaged islet cells, and reshapes the intestinal flora of diabetic mice.

Supplementation with cyanidin and delphinidin mitigates high fat diet-induced endotoxemia and associated liver inflammation in mice

Eleonora Cremonini et al.

Summary: Supplementation with cyanidin and delphinidin for 4 weeks can mitigate HFD-induced liver steatosis and inflammation. This may be due to the suppression of metabolic endotoxemia and the associated signaling cascades by CDRE supplementation.

High-fat diet-induced upregulation of exosomal phosphatidylcholine contributes to insulin resistance

Anil Kumar et al.

Summary: This study reveals that lean mice become insulin resistant after being administered exosomes isolated from the feces of obese mice fed a high-fat diet or from patients with type II diabetes. The altered lipid composition of exosomes from high-fat diet-fed mice affects the uptake by macrophages and hepatocytes, leading to inhibition of the insulin signaling pathway. Exosome-derived phosphatidylcholine activates AhR, inhibiting the expression of genes essential for activation of the insulin signaling pathway.

New insight and potential therapy for NAFLD: CYP2E1 and flavonoids

Kaiyue Wang et al.

Summary: NAFLD prevalence has been increasing over the years, with no effective treatment due to its complex pathogenesis. Cytochrome P450 2E1 (CYP2E1) is reported to play a crucial role in NAFLD development, and flavonoids have been shown to have a hepatoprotective effect by regulating CYP2E1 activity. Flavonoids may potentially become effective drugs for NAFLD treatment in the future.

Study on the nutritional characteristics and antioxidant activity of dealcoholized sequentially fermented apple juice with Saccharomyces cerevisiae and Lactobacillus plantarum fermentation

Hongcai Li et al.

Summary: The study showed that the sequential fermentation of apple juice with Saccharomyces cerevisiae, dealcoholization, and Lactobacillus plantarum can enrich the nutritional properties and antioxidant activity of the product. Physicochemical indicators, functional components, aroma, and antioxidant activity of the products changed significantly at different stages, leading to enhanced antioxidant activity.
