Highly branched corn starch: Preparation, encapsulation, and release of ascorbic acid

Summary: This study aimed to prepare a novel supporting carrier HBCS and investigate its encapsulation property with AA. The results showed that HBCS could serve as a potential highly branched carrier and the formation of HBCS-AA inclusion complex was confirmed by DSC. Moreover, the release of AA followed the pseudo-Fickian diffusion mechanism and its photostability and thermostability were moderately enhanced.
