Changes in structure, rheological property and antioxidant activity of soy protein isolate fibrils by ultrasound pretreatment and EGCG

Novel Antibacterial Food Packaging Based on Chitosan Loaded ZnO Nano Particles Prepared by Green Synthesis from Nettle Leaf Extract

Summary: A new nonstoichiometric polyelectrolyte complex was prepared using chitosan and carboxymethyl cellulose, with the addition of zinc oxide nanoparticles synthesized from nettle leaf extract to enhance antibacterial properties. The physicochemical properties were evaluated using various analytical techniques, showing that increasing CMC content led to higher water uptake and ash percentage, with the best transparency and opacity observed in Chitosan:CMC (75:25) ratio. The highest antibacterial activity was found in the composite without nano ZnO for Escherichia coli, while the addition of nano ZnO (PCC3/ZnO) in Staphylococcus aureus medium resulted in the best overall performance.

These blends could be used in active food packaging.

Summary: Galactomannans (GM) such as guar gum (GG) and locust bean gum (LBG) are commonly used as thickening agents in the food industry. This study investigated the physical, rheological, and structural properties of GG and LBG agglomerates with varying concentrations of maltodextrin (MD) binder, showing that GM with 40% MD had better flowability and lower cohesiveness. GG had larger particle sizes and lower tan delta values compared to LBG, indicating enhanced elastic properties.

Water vapor sorption and permeability of sustainable alginate/collagen/SiO2 composite films

Summary: Research on blend films of sodium alginate (SA) and hydrolyzed collagen (HC) containing SiO2 nanoparticles showed that concentrations higher than 6% led to significant reductions in film water content and WVP. The moisture sorption behavior exhibited a type III isotherm, indicating reduced interactions with water vapor at low water activity. These findings suggest that SA/HC/SiO2 composite films could be a simple, economical, and sustainable alternative for packaging with reduced water sensitivity.
