pH influences the interfacial properties of blue whiting (M. poutassou) and whey protein hydrolysates determining the physical stability of fish oil-in-water emulsions

Jose Maria Ruiz-Alvarez et al.

Summary: The interfacial properties of whey protein (WPH) and blue whiting protein (BPH) hydrolysates are influenced by pH, with WPH showing higher interfacial activity at pH 8. This results in smaller oil droplets and a more resistant interfacial peptide layer for stable emulsions. BPH exhibits higher dilatational elasticity and viscosity at pH 2, leading to stable emulsions at this pH but not at pH 8.

Effects of soybean protein isolate - polyphenol conjugate formation on the protein structure and emulsifying properties: Protein - polyphenol emulsification performance in the presence of chitosan

Shizhang Yan et al.

Summary: The study investigated the influence of covalent complexation between EGCG and SPI on protein structure and emulsifying properties, as well as the effect of chitosan on emulsion stability. The stability of the emulsion was improved by increasing CS concentration, attributed to an increase in electrostatic force and steric hindrance among droplets. These results suggest that SPI-EGCG conjugates can be used as food additives and for constructing lipophilic active ingredient delivery systems.

Conformational state and charge determine the interfacial film formation and film stability of β-lactoglobulin

Helena Kieserling et al.

Summary: Our study revealed that protein conformational state and charge influence the mechanical stability of protein-stabilized emulsions, impacting the stability of the protein film at the oil/water-interface. Under different pH conditions, structural changes and interactions of beta-lactoglobulin vary, leading to alterations in the stability and molecular density of the protein film.

Physical and oxidative stability of oil-in-water (O/W) emulsions in the presence of protein (peptide): Characteristics analysis and bioinformatics prediction

Xiaohong Tong et al.

Summary: Soybean protein hydrolysate-stabilized oil-in-water emulsions created via limited hydrolysis with Alcalase exhibited superior physical and oxidative stability, with the emulsion produced by enzymatic hydrolysis for 90 minutes showing the best stability. LC-MS/MS analysis and bioinformatic tools were used to study the mechanism behind the emulsion-stabilizing action and identify potential bioactive peptides in the extracted protein from the 90-minute emulsion.
