Fortification of multigrain flour with onion skin powder as a natural preservative: Effect on quality and shelf life of the bread

Summary: The study aimed to improve the shelf life and antioxidant capacity of multigrain bread by adding onion skin powder as a natural preservative. Results showed that addition of 3% OSP significantly increased the sensory attributes, total phenols, and total flavonoids content of the bread.
