Effects of soybean protein isolate - polyphenol conjugate formation on the protein structure and emulsifying properties: Protein - polyphenol emulsification performance in the presence of chitosan

Summary: The study investigated the influence of covalent complexation between EGCG and SPI on protein structure and emulsifying properties, as well as the effect of chitosan on emulsion stability. The stability of the emulsion was improved by increasing CS concentration, attributed to an increase in electrostatic force and steric hindrance among droplets. These results suggest that SPI-EGCG conjugates can be used as food additives and for constructing lipophilic active ingredient delivery systems.

Effect of whey protein isolate on the stability and antioxidant capacity of blueberry anthocyanins: A mechanistic and in vitro simulation study

Summary: The study found that whey protein isolate (WPI) can enhance the stability and antioxidant activity of blueberry anthocyanins (ANs), particularly at a concentration of 0.15 mgmL(-1), by stabilizing them through hydrophobic forces. It was also revealed that the structure of WPI changes when it binds non-covalently to the major anthocyanin monomer malvidin-3-O-galactoside (M3G), resulting in fewer alpha-helices and more beta-sheets being formed. Moreover, molecular docking studies showed that WPI, especially immunoglobulin (IgG), plays a significant role in stabilizing ANs through hydrogen bonds and hydrophobic forces.

Effect of Freeze-Thaw Cycles on the Oxidation of Protein and Fat and Its Relationship with the Formation of Heterocyclic Aromatic Amines and Advanced Glycation End Products in Raw Meat

Summary: The research aimed to study the impact of freeze-thaw cycles on porcine longissimus protein and lipid oxidation, as well as HAAs and AGEs. After seven cycles, there was an increase in Norharman and Harman, as well as N epsilon-carboxyethyllysine and N epsilon-carboxymethyllysine, while glucose, creatine, and creatinine decreased. The findings suggest that oxidation and the Maillard reaction during freeze-thaw cycles promote the production of HAAs and AGEs in raw pork.
