A novel potent inhibitor of 2-amino-l-methyl-6-phenylimidazo[4,5-b] pyridine (PhIP) formation from Chinese chive: Identification, inhibitory effect and action mechanism

Summary: Differential solvent extraction and phytochemical profiling were used to identify potent inhibitors of PhIP formation in Chinese chive. The inhibitory mechanism was found to be related to phenylacetaldehyde scavenging rather than antioxidant activities. Organic synthesis and structural elucidation confirmed the proposed mode of action for the novel inhibitor.

Blueberry, raspberry, and strawberry extracts reduce the formation of carcinogenic heterocyclic amines in fried camel, beef and chicken meats

Summary: This study demonstrates that berry marinades can reduce the formation of harmful heterocyclic amines in meat during cooking. The reduction of HCAs is associated with marinade time, with longer marinating times (6 hours and above) showing more significant effects. Additionally, marinating for less than 1 hour can lead to an increase in certain HCAs.

Summary: The Maillard reaction in foods can lead to the production of toxic byproducts, which can be inhibited by using exogenous additives such as hydrocolloids to reduce dietary exposure and associated health risks. Hydrocolloids have unique structural diversities that enable them to actively participate in the Maillard reaction and mitigate the formation of toxic byproducts, offering dual beneficial potential for food processing. More detailed and systematic analyses are needed to further clarify the structure-activity relationships and mechanisms of action of hydrocolloids in inhibiting harmful Maillard reaction products.
