Nonthermal Processing Technologies for Stabilization and Enhancement of Bioactive Compounds in Foods

Gustavo V. Barbosa-Canovas et al.

Summary: Nonthermal technologies for processing selected foods are becoming increasingly relevant in the food industry as they preserve the nutritional value and fresh characteristics. The impact of these technologies on bioactive compounds serves as a key indicator to assess nutritional changes in food products before and after processing. Despite challenges in comparing results, scientific literature and data provide valuable insights into how nonthermal processing affects different bioactive compounds.

Do we need cold plasma treated fruit and vegetable juices? A case study of positive and negative changes occurred in these daily beverages

Pawel Pohl et al.

Summary: Cold atmospheric pressure plasma (CAPP) technology can be used to treat fruit and vegetable beverages, not only extending their shelf-life, but also improving their nutritional properties and anticancer activity. The presence of numerous reactive oxygen and nitrogen species (RONS) at the plasma-liquid interface can increase the content of nutritional and bioactive compounds in the beverages.

In vitro viability of L. Casei B-442 and fructooligosaccharides integrity in Amazonian sapota-do-solimo tilde es functional juice

Rhonyele Maciel da Silva et al.

Summary: Sapota-do-solimo tilde es juice can be fermented by Lacticaseibacillus casei B-442 to produce a probiotic and a synbiotic juice. The probiotic juice has a higher microbial survival rate and higher probiotic count after simulated digestion compared to the prebiotic juice. Lactic acid and acetic acid are the main metabolites produced in the synbiotic juice, while isobutyric and propionic acids have higher production in the probiotic juice.

Cold plasma jet with dielectric barrier configuration: Investigating its effect on the cell membrane of E. coli and S. cerevisiae and its impact on the quality of chokeberry juice

Zhilin Gan et al.

Summary: The study found that the inactivation effects of cold plasma on Escherichia coli and Saccharomyces cerevisiae increased with treatment time and decreased with sample volume, with Escherichia coli being more significantly inactivated than Saccharomyces cerevisiae. Cold plasma achieves sterilization by generating active particles that attack microbial cell membranes and intracellular components, leading to cell rupture.

Cold plasma technology for fruit based beverages: A review

Roji Waghmare

Summary: Cold plasma technology shows promising potential in retaining the quality properties of fruit beverages by preventing spoilage microorganisms growth, inactivating endogenous enzymes, and maintaining physico-chemical properties. However, the effect of plasma exposure time on bioactive compounds in beverages is significant, while cold plasma has no significant impact on quality parameters of beverages due to less exposure time. Future research should focus on the complex mechanisms of interaction with plasma species.
