Microbiological analysis of frozen profiteroles and mini chocolate eclairs implicated in a national salmonellosis outbreak

Summary: Canada experienced a nationwide salmonellosis outbreak between November 2018 and May 2019 linked to Salmonella enterica ser. Enteritidis in frozen profiteroles. Analysis revealed low levels of Salmonella in the food products, with conditions conducive to bacterial growth. Hygiene indicators were higher in Salmonella positive samples, and factors such as storage conditions and food matrix composition can influence bacterial levels upon thawing.

Summary: pHierCC is a scalable clustering scheme based on core genome multi-locus typing, allowing incremental, static, and multi-level cluster assignments of genomes. HCCeval is used to identify optimal thresholds for assigning genomes to cohesive HierCC clusters. HierCC has genotyped over 530,000 genomes from various bacteria species since its implementation in 2018.
