Development of alginate/inulin carrier systems containing non-conventional Amazonian berry extracts

Summary: In this study, microparticles containing Clidemia rubra extract were produced using the ionic gelation encapsulation process with different concentrations of inulin and sodium alginate as carriers. Characteristic signals of sugars, organic acids, and phenolic compounds were identified in the extract. The addition of inulin significantly improved the encapsulation efficiency of antioxidant compounds and provided better protection of the encapsulated bioactive compounds.
