Comprehensive evaluation of emulsifying and foaming properties of Gleditsia caspica seed galactomannan as a new source of hydrocolloid: Effect of extraction method

Rasoul Niknam et al.

Summary: The effect of different extraction methods on the emulsifying and foaming aspects of galactomannan from Gleditsia caspica seed was comprehensively investigated. Increasing galactomannan concentration and utilizing ultrasound or microwave extraction significantly improved the emulsifying capacity, stability, zeta potential, and foaming stability. However, foaming capacity, z-average, and PDI decreased. Various parameters, including M/G ratio, molecular weight, viscosity, protein content, and hydrophilic or hydrophobic nature, influenced the emulsifying and foaming features. Ultrasound or microwave extraction reduced the surface tension reduction ability of galactomannan from 83.11 mN/m (for air/water interface) to 54.17, 50.54, and 52.14 mN/m for different extraction methods.
