Preparation and characterization of gelatin/chitosan/3-phenylacetic acid food-packaging nanofiber antibacterial films by electrospinning

The interaction between chitosan and 3-phenyllactic acid led to reduced crystallinity of the films, with GCP-2 film exhibiting the best thermal stability, water stability, and water vapor permeability. Overall, the nanofiber films with 3-phenyllactic acid demonstrated enhanced antibacterial effects, especially GCP-2 film which significantly reduced bacteria in a short period, indicating its potential application in active food packaging.
