Effect of hot air gradient drying on quality and appearance of beef jerky

Novel processing technologies for improving quality and storage stability of jerky: A review

Summary: Innovative processing technologies have been developed to improve the quality and storage stability of jerky, divided into two categories: texture modification and shelf life extension. Technologies such as super-heated steam, mid-infrared radiation, microwave radiation, vacuum, and humectants can enhance the evaporation rate and meat structure for texture improvement. Natural antioxidants and processing technologies can inhibit lipid oxidation and microbial growth for extending shelf life of jerky.

Dynamics of heat transfer and moisture in beef jerky during hot air drying

Summary: This study investigated the effects of different temperatures and times during hot air multi-stage drying on surface temperature, moisture migration, muscle shrinkage, and microstructure of beef jerky. Results showed that moisture content and diffusivity of the sample decreased with increasing temperature, while surface temperature, moisture migration, muscle shrinkage, and spacing between muscle fibers increased. The highest quality beef jerky was achieved when dried at 40 degrees C for 1 hour, 50 degrees C for 1 hour, and 60 degrees C for 2 hours.

Quality Characteristics of Semi-Dried Restructured Jerky Processed Using Super-Heated Steam

Summary: The study shows that using super-heated steam (SHS) drying can reduce moisture content, water activity, and residual nitrite content of jerky. With the treatment at 250 degrees C for 120 min, the overall acceptability score for jerky was the highest, indicating a potential industrial value of SHS drying as a replacement for hot air drying.
