However, challenges arise in the application of these natural compounds due to their sensitivity to processing/storage conditions and potential deterioration in final products. The development of nano/microencapsulation technology offers a promising solution for improving the stability and efficacy of natural antimicrobials in various food environments.

Summary: Environmental signals play a role in promoting microbial biofilm formation and genetic heterogeneity. Biofilms produced by pathogens in food production facilities are a major source of contamination, but the mechanisms of biofilm-isolated sessile cells are not well understood. Studies show that the virulence of biofilm-isolated Lm is temporarily attenuated in mice during the early stage of infection (12-24 hours), but fully restored at a later stage (48 hours).

Effect of Gaseous Ozone on Listeria monocytogenes Planktonic Cells and Biofilm: An In Vitro Study

Summary: Ozone has a certain inhibitory effect on Listeria monocytogenes biofilm, but it cannot completely eliminate it. The experiment showed that ozone can effectively reduce the number of planktonic cells, but has a minor impact on biofilm biomass. Ozone may serve as an additional tool to combat Listeria monocytogenes and enhance the disinfection procedures in food processing environments.
