Dietary fiber concentrates recovered from agro-industrial by-products: Functional properties and application as physical carriers for probiotics

Summary: The ethanol-washing method to obtain alcohol-insoluble residues (AIRs) from agro-industrial by-products allows for the recovery of nutritional dietary fiber with good absorption and antioxidant capacities. Different AIRs exhibit variations in water and oil holding capacity as well as protein absorption capacity, showing protective effects on probiotics. Among the sources of AIRs, the one from clementine peel performs better in improving the viability of probiotic cells after heat shock than others.

Summary: Amylases are enzymes that break down starch into sugars and are considered valuable for industrial applications. Haloarchaea, living in extreme environments, are ideal sources for novel proteins that can tolerate harsh conditions. The screening of haloarchaea from Odiel salterns in Spain led to the identification of Haloarcula sp. HS, which showed poly-extremotolerant amylase activities and potential for treating bakery waste under high salinity conditions.

Ultrasound-assisted extraction of protein from Bombay locusts and its impact on functional and antioxidative properties

Summary: The study showed that ultrasound-assisted process (UAP) could increase the yield and protein recovery of protein extracted from Bombay locusts (BL), improve solubility without affecting foaming capacity and stability, but impact emulsion activity and stability. UAP also enhanced BL with high radical scavenging activities and good electron donating ability, affecting the isoelectric point and molecular characteristics compared to typical process (TP).
