Alternative approaches to the risk management of Listeria monocytogenes in low risk foods

Jeffrey M. Farber et al.

Summary: Listeria monocytogenes is an important foodborne pathogen associated with high hospitalization and case-fatality rates, with outbreaks due to contaminated food continuing to occur globally. Different countries have established different microbiological criteria for this pathogen in food, with the US having a zero-tolerance approach for all ready-to-eat foods. Alternative approaches such as using alternate sampling methods and big data for risk assessment are suggested to enhance the control of L. monocytogenes.

Differential Antimicrobial Effect of Essential Oils and Their Main Components: Insights Based on the Cell Membrane and External Structure

Sergio Andrade-Ochoa et al.

Summary: Research has shown that essential oils like oregano and cinnamon exhibit strong biological activity against bacteria, fungi, and protozoans. Oregano essential oil demonstrated the best antibacterial activity, while cinnamon essential oil showed the best fungicidal activity. Major components such as thymol and carvacrol also displayed effective antimicrobial properties, with cinnamaldehyde acting as a potent antifungal compound.

Distribution, virulence, genotypic characteristics and antibiotic resistance of Listeria monocytogenes isolated over one-year monitoring from two pig slaughterhouses and processing plants and their fresh hams

Gianluca Rugna et al.

Summary: Listeria monocytogenes contamination in raw pork and ready to eat foods is a significant food safety concern, with increasing detection of antimicrobial-resistant isolates. Environmental contamination in post-slaughter processing is confirmed as a significant cause of meat contamination by L. monocytogenes in two different plants. High levels of resistance were observed to multiple antimicrobial agents, indicating a trend towards broad antimicrobial resistance in L. monocytogenes.

Antilisterial Effect of a Natural Formulation Based on Citrus Extract in Ready-To-Eat Foods

Juan Jose Ariza et al.

Summary: This study aimed to evaluate the antimicrobial effectiveness of a citrus extract formulation rich in flavonoids against several L. monocytogenes and L. innocua strains. The results showed that citrus extract had significant antimicrobial activity in vitro against the target strains tested and on the surface of food, particularly in carne mechada and mozzarella cheese. The findings suggest that citrus extract could be a promising tool to enhance the hygienic quality of ready-to-eat foods.
