Antibiotic resistance profile and detection of degradative enzymes by Enterobacteriaceae isolated from raw goat milk

Gustavo Luis de Paiva Anciens Ramos et al.

Summary: This study characterized Enterobacteriaceae isolates from raw goat milk in Rio de Janeiro, Brazil and found that a majority of the isolates showed biofilm-producing activity, while only around 20% exhibited degradative enzyme activity. A single isolate of Klebsiella variicola was classified as multidrug-resistant, with high production of extended-spectrum beta-lactamases and carbapenemases in presumptive identification.

Assessment of Quality and Safety of Farm Level Produced Cheeses from Sheep and Goat Milk

Mariana Kovacova et al.

Summary: Consumption of sheep's and goat's milk and cheese is increasing, but there is still insufficient knowledge in the field of hygiene, technology and health safety of cheeses production. The study found that the month of milking influences the milk components content, while ripening time affects microbial safety and color of cheeses. The analyzed samples were deemed suitable for human consumption under applicable regulations.

Summary: Lactic acid bacteria (LAB) are a diverse group of Gram-positive, facultative anaerobic bacteria. They are widely used in fermented foods and beverages and provide benefits to the human gut through synergistic interactions with the gut microbiome. Due to their positive health effects, LAB are considered safe microorganisms.
