Total Phenol Content and Antioxidant Activity of Different Celta Pig Carcass Locations as Affected by the Finishing Diet (Chestnuts or Commercial Feed)

Summary: The study revealed that although chestnuts had significantly lower total phenol and flavonoid content compared to commercial feed, they exhibited better antioxidant activity. Additionally, it was found that chestnuts markedly reduced the total phenol content and antioxidant activity of muscles and liver in the Celta pig breed. Liver showed the best antioxidant characteristics regardless of the diet utilized.
