Effect of malaxation temperature on the physicochemical and sensory quality of cv. Cobrancosa olive oil and its evaluation using an electronic tongue

Itala M. G. Marx et al.

Summary: Different extraction temperatures were studied in the extraction of olive oil, with oils extracted at 22 degrees Celsius showing better physicochemical quality and stronger positive sensory sensations. Additionally, a potentiometric electronic tongue was found to be effective in discriminating oils based on extraction conditions.

Impact of the malaxation temperature on the phenolic profile of cv. Cobrancosa olive oils and assessment of the related health claim

Itala M. G. Marx et al.

Summary: The malaxation temperature has an impact on the phenolic profile of olive oil, with higher temperatures leading to a decrease in most compounds. This trend is particularly evident in hydroxytyrosol and tyrosol bound forms, although all industrially extracted oils tested were found to support the health claim.

Total Analysis of the Major Secoiridoids in Extra Virgin Olive Oil: Validation of an UHPLC-ESI-MS/MS Method

Julian Lozano-Castellon et al.

Summary: Extra virgin olive oil (EVOO) is rich in nutritional and antioxidant compounds compared to other vegetable oils, making it an important component of the Mediterranean diet. This study developed a simple UHPLC-ESI-MS/MS method for quantifying secoiridoids in EVOO, overcoming challenges posed by their complex transformations during production and analysis. Validation of the method according to AOAC guidelines showed satisfactory results in terms of matrix effect and recoveries.

Influence of the Ripening Stage and Extraction Conditions on the Phenolic Fingerprint of 'Corbella' Extra-Virgin Olive Oil

Anallely Lopez-Yerena et al.

Summary: The study focused on the ancient 'Corbella' olive variety from Catalonia and found that harvesting olives earlier resulted in a higher content of secoiridoids in the oil. The best processing conditions for high-quality EVOO were determined to be malaxation at 37 degrees Celsius for 30 minutes.
