Consumer perception of situational appropriateness for fresh, dehydrated and fresh-cut fruits

Summary: The study revealed that easily peelable fresh fruits like mandarins and bananas are preferred by consumers in most situations. Dehydrated fruit is mainly seen as suitable for use as an ingredient or a healthy snack, while fresh-cut fruit is more appropriate for inclusion in school lunches or immediate consumption. Although dehydrated and fresh-cut fruits have the potential to increase fruit consumption for 38% of the population, barriers related to sensory properties, plastic packaging, and misperceptions about their health benefits need to be overcome.
