Edible mushrooms as a novel trend in the development of healthier meat products

Antonio Perez-Montes et al.

Summary: Mushrooms are a promising source of bioactive compounds for healthier meat products, with antimicrobial and antioxidant properties that can improve product shelf-life. Incorporating different types of mushrooms in meat products can significantly enhance protein, dietary fiber, and ash content without compromising physico-chemical properties. Additionally, mushrooms can serve as a nutritional substitute for salt, phosphates, protein, and fat in meat product formulations.

A systematic review on consumer acceptance of alternative proteins: Pulses, algae, insects, plant-based meat alternatives, and cultured meat

M. C. Onwezen et al.

Summary: Consumers' dietary patterns have a significant impact on health and the environment, and one possible solution is to substitute meat consumption with alternative protein sources. This systematic review identifies 91 articles focusing on consumer acceptance of five alternative proteins, showing that acceptance levels vary across different types of proteins with insects and cultured meat having the lowest acceptance. Factors such as taste, health motives, familiarity, attitudes, food neophobia, disgust, and social norms drive consumer acceptance across various alternative proteins.

Insights into formation, detection and removal of the beany flavor in soybean protein

Bei Wang et al.

Summary: Plant-based meat analogues (PBMA) show potential in solving the global meat supply and demand imbalance. However, the naturally occurring beany flavor in soybeans hinders their further development. Different methods, including biotechnological, physical, and chemical approaches, can be utilized to remove the beany flavor, with physical processing being relatively effective but heat treatment potentially causing negative impacts on soybean protein functionality. Enzymatic modification combined with novel non-thermal processing and optimized texturization process of soybean protein are significant in eliminating the beany flavor in PBMA.

Novel strategy for developing healthy meat products replacing saturated fat with oleogels

Maria Lopez-Pedrouso et al.

Summary: There is a growing trend in the meat products industry towards producing healthier options with lower saturated fat content, using edible oleogels as a replacement for animal fat. While incorporating healthy vegetable oils into the formulations can improve the main health indicators of fatty acid profile, issues such as oleogel textural properties still need to be addressed. Additional research on new organogelators and methods, as well as understanding interactions with antioxidants to enhance oleogel oxidative stability and sensory attributes, should be prioritized.
