Nanoemulsion Versus Microemulsion Systems for the Encapsulation of Beetroot Extract: Comparison of Physicochemical Characteristics and Betalain Stability

Summary: This study demonstrates the superiority of nanoemulsion over microemulsion in improving the thermal and pH stability of betalain. Nanoemulsion shows sustained release and higher thermal and pH stabilities of betalain, as well as lower droplet coarsening rate and improved color stability during storage, due to its nanoscale droplet diameter, high viscosity, and non-Newtonian rheological behavior.

Physicochemical and Antioxidant Properties Based on Fish Sarcoplasmic Protein/Chitosan Composite Films Containing Ginger Essential Oil Nanoemulsion

Summary: In this study, ginger essential oil (GEO) nanoemulsion was incorporated into fish sarcoplasmic protein (FSP) and chitosan (CH) blend films at different levels to evaluate their physical, mechanical, antioxidant, and thermal properties. The addition of GEO nanoemulsion reduced tensile strength but increased elongation at break of the films, while also enhancing water barrier properties and affecting water distributions. Scanning electron microscope (SEM) and Fourier transform infrared (FTIR) spectroscopy provided insights into the microstructure and molecular interactions of the films, highlighting the potential of GEO nanoemulsion for improving the properties of environmentally friendly packaging films.

Encapsulation of Sardine Oil by Electrospraying with Gliadins and Pecan Nutshell Extracts for its Stabilization

Summary: This study optimized the diameter of encapsulated sardine oil particles and investigated the stabilization effect of pecan nutshell extract. The results suggest that gliadins and pecan nutshell extract could be effective new wall materials for encapsulation and stabilization of sardine oil. Additionally, pecan nutshell extract has the potential to be used as a nutraceutical ingredient or in the development of functional foods by the food industry.

Optimization and characterization of 1,8-cineole/hydroxypropyl-β-cyclodextrin inclusion complex and study of its release kinetics

Summary: The study investigated the antifungal and AFB(1) inhibitory efficacy of Jasmine essential oil-loaded in chitosan nanoparticles against Aspergillus flavus. The encapsulation efficiency and loading capacity were optimized with a 1:1 ratio of chitosan: JEO. JEO-NP showed enhanced antifungal activity and free radical scavenging, and protected maize seeds from fungal growth and aflatoxin contamination.

Characterization of Rosewood and Cinnamon Cassia essential oil polymeric capsules: Stability, loading efficiency, release rate and antimicrobial properties

Summary: In this study, Rosewood and Cinnamon essential oils were successfully encapsulated using Tween 80 and PBAT as wall material, and evaluated through various tests. The nature of the essential oils was found to significantly impact the stability and loading efficiency of the capsules, while the release mechanism followed Fickian diffusion. Additionally, the capsules showed promising antimicrobial activity against various microorganisms.

Effect of edible chitosan and cinnamon essential oil coatings on the shelf life of minimally processed pineapple (Smooth cayenne)

Summary: The study aimed to evaluate the shelf life of minimally processed pineapple with an edible chitosan-based coating containing cinnamon essential oil at different concentrations stored at 5 +/- 1 degrees C for 15 days. The coatings were effective in preserving the pineapple by reducing mold and yeast growth, weight loss, and firmness loss. Treatment with 2% chitosan and 0.5% CEO showed the best results in terms of weight loss and color maintenance.
