Effects of Bacillus megaterium L222 on quality and bacterial diversity of Sichuan paocai

Summary: The study revealed significant differences in flavor and bacterial diversity between the Sichuan paocai inoculated with Bacillus megaterium L222 and spontaneously fermented paocai. Inoculation of B. megaterium L222 led to higher free amino acid content, maintained high levels of alcohols, improved esters synthesis, and controlled sulfides increase. The representative bacteria in the inoculated paocai were mainly Weissella, Lactococcus, Bacillus, Leuconostoc, with increased amount of Weissella and inhibition of opportunistic pathogens and other bacteria.

Bacterial diversity and flavor profile of Zha-Chili, a traditional fermented food in China

Summary: The traditional Chinese fermented food, zha-chili, has a special flavor and serves as an important energy source. The microbial community structure plays a crucial role in determining the final quality of zha-chili. This study investigated the bacterial diversity and flavor quality of zha-chili samples from different regions, revealing significant differences in bacterial community structure and flavor profiles, as well as correlations between dominant bacterial genera and flavor indicators.

Effect of Hericium erinaceus on bacterial diversity and volatile flavor changes of soy sauce

Summary: This study investigates the regulation of soy sauce quality and microbial community by adding Hericium erinaceus during fermentation process. It was found that Hericium erinaceus had antimicrobial effects, decreased bacterial richness and diversity, and promoted the accumulation of esters and alcohols in soy sauce. Additionally, it positively influenced sensory constituents in soy sauce production.

Bacterial diversity analysis in Kazakh fermented milks Shubat and Ayran by combining culture-dependent and culture-independent methods

Summary: Shubat and Ayran are popular traditional fermented milk products in Kazakhstan, but there is limited knowledge about their natural microbial diversity. This study used high-throughput sequencing and traditional culture-dependent methods to evaluate bacterial diversity in these products, identifying indigenous strains and natural bacterial diversity. The results are expected to improve commercial production and quality control of these milk products.

Summary: This study identified the bacterial compositions of zha-chili samples using sequencing techniques, revealing significant differences among sample types and indicating that sodium chloride content may affect the ecological succession of bacterial communities. Dominant bacterial species were found to be strongly correlated with aroma but not with taste. Additionally, 4 dominant KEGG pathways were discovered, including metabolism, genetic information processing, environmental information processing, and cellular processes.

Rice varieties affect bacterial diversity, flavor, and metabolites of zha-chili

Summary: This study investigated the structure and diversity of bacterial communities in zha-chili prepared using different rice varieties and found that the use of glutinous rice led to a richer diversity of bacterial species. Lactic acid bacteria were identified as the predominant microbes in zha-chili. The aroma of zha-chili was influenced by the raw material while the taste characteristics were significantly correlated with the bacterial microbiota.
