Swallowing and Liking of Vegetable-Enriched Bread Compared With Commercial Breads as Evaluated by Older Adults

Summary: This study compared breads of increasing nutrient density in terms of their physical, sensory, and ease-of-chewing and swallowing properties. Vegetable-enriched breads were found to be more liked, easier to chew, and easier to swallow compared to white and wheatmeal breads, especially suitable for older individuals.

The study suggests that brown sorghum is superior in providing gluten-free products with better nutritional profiles, and further research is needed to explore the health effects of different sorghum genotypes in food products.
