Fabrication and characterization of oil-in-water pickering emulsions stabilized by ZEIN-HTCC nanoparticles as a composite layer

Summary: In this study, ZEIN-HTCC nanoparticles were used as stabilizers to prepare stable oil-in-water Pickering emulsions, which could be stored for up to 21 days under specific conditions. Analysis indicated that zein and HTCC form a composite layer on the surface of oil droplets to prevent emulsion droplet aggregation. This novel zein-based Pickering emulsion shows potential as a carrier for lipophilic nutrients delivery.

In-situ dispersion of casein to form nanoparticles for Pickering high internal phase emulsions

Summary: The present study found that 3% casein modulated by solution pH could be an outstanding stabilizer for oil-in-water Pickering HIPEs, with control over rheological properties and enhanced stability and viscoelasticity. The casein particles at different pH levels exhibited varied zeta-potential and three-phase contact angles, indicating their irreversible anchoring at the oil-water interface. The stability of the HIPEs against heating and sensitivity to frozen-thawing treatment were also observed, highlighting the potential of casein particles for providing electrostatic repulsion and steric hindrance to prevent coalescence or flocculation of oil drops in Pickering HIPEs.

Summary: Novel protein-polysaccharide colloidal particles have been successfully developed for stabilizing and delivering beta-carotene-loaded HIPPEs, showing improved pH and storage stability as well as enhanced retention of beta-carotene at pH 6.0. Additionally, these colloidal particles contributed to increased lipolysis and bioaccessibility of beta-carotene within HIPPEs, demonstrating potential for controlled release and improved chemical stability.

Tannic acid-fortified zein-pectin nanoparticles: Stability, properties, antioxidant activity, and in vitro digestion

Summary: This research successfully loaded tannic acid into zein nanoparticles and coated them with anionic pectin, forming core-shell nanoparticles. The nanoparticles showed resistance to flocculation under various conditions, preserved the antioxidant capacity of tannic acid, and released the compound primarily in the small intestine. These findings suggest that pectin-coated zein nanoparticles could be effective encapsulation and delivery systems for hydrophilic polyphenols.
