A novel digital image method for determination of reducing sugars in aged and non-aged cachacas employing a smartphone

Summary: A novel method using digital image and a smartphone as detector was proposed for colorimetric determination of reducing sugars in cachaca. The method is simple, does not require complex technical knowledge, and could be used as a tool to check possible fraud, adulteration, or non-compliance to the law. Additionally, it was found through experiments that non-aged cachacas have three times higher reducing sugar content compared to aged cachacas, as producers often add sugar to adjust sensory deficits in the final product.

Summary: Geographical origin significantly impacts the nutritional and pharmaceutical properties of Tuber indicum, with samples from Sichuan showing higher protein and ash content, Yunnan samples having higher pectin content and antioxidant activity, and Jilin samples containing more total carbohydrates and phenolic acids. Understanding these differences can enhance knowledge of the nutritional values, chemical compositions, and biological properties of T. indicum.

Impact of processing technologies on isoflavones, phenolic acids, and antioxidant capacities of soymilk prepared from 15 soybean varieties

Summary: In this study, soy milk samples from different soybean varieties were prepared using various methods. Wet method preparation showed higher total phenolic content and antioxidant activity, while dry method preparation resulted in higher total flavonoid and phenolic acid content. Wet method was found to improve phenolic content and antioxidant activity of soy milk samples.
