Summary: Sweet potatoes are a nutritious source that can be added to processed foods in the form of paste, with their moisture and starch contents affecting the physicochemical properties. This study measured the changes in moisture, starch, and alpha-amylase content of sweet potatoes over eight weeks post-harvest, utilizing near-infrared analyses and chemometric models for prediction. The use of different preprocessing methods for the near-infrared spectrum, such as S-G, SNV, and multiplicative scattering correction, improved the accuracy of the models in predicting and categorizing the internal quality of sweet potatoes.
