Summary: The study compared freeze drying and spray drying for processing wild thyme drugs, finding that freeze drying was more effective in terms of total powder yield and polyphenol content. Dehumidified Air-Assisted Spray-Drying of Cloudy Beetroot Juice at Low Temperature

Summary: This study investigated the physicochemical properties of powders obtained by spray drying cloudy beetroot juice using dehumidified air with or without carriers. Results indicated that drying without carriers at low temperatures (90 or 130 degrees C) was possible and resulted in powders with satisfactory properties. The addition of carriers led to lower betalain loss but lower overall process yields compared to powders without carriers. Best process yields were achieved for powders without carriers at 130 degrees C and 90 degrees C.
