Summary: Stevia rebaudiana, a plant native to Brazil and Paraguay known for its sweet leaves, has been widely studied and cultivated for its potential as a novel non-caloric sugar substitute. Various chemical methods, such as HPTLC, HPLC, ESI-MS, and NMR, have been used for identification and structural differentiation of diterpene glycosides in Stevia rebaudiana. Modification of diterpene glycosides by chemical and enzymatic reactions, as well as strategies for cost-saving scaling up of the purification process, have also been discussed in the literature.

Degradation of steviol glycosides via steviol and Monicanone by soil microorganisms and UASB effluent

Summary: Steviol glycosides can be fully deglycosylated to steviol by bacterial populations in soil, unaffected by heat treatment. A specific bacterial community was selected through extended incubation, capable of converting steviol glycosides to a new ketone named Monicanone. In addition, a related compound named Monicanol was isolated from an impure preparation of Monicanone through chromatographic separation and purification.
