Analysis of taste characteristics and identification of key chemical components of fifteen Chinese yellow tea samples

Summary: In this study, quantitative descriptive analysis (QDA) and partial least squares regression (PLSR) were used to analyze the sensory characteristics and chemical components of 15 yellow tea samples from different regions of China. The findings showed significant differences in taste attributes among different samples and identified key chemical components contributing to taste characteristics. Cluster analysis divided all yellow tea samples into four categories, providing a theoretical basis for further research on the adjustment and control of tea taste quality.

The profile of dynamic changes in yellow tea quality and chemical composition during yellowing process

Summary: Yellowing is the key process in producing yellow tea, but its impact on tea quality and chemical composition is not fully understood. This study used electronic eye, tongue, and metabolomics to investigate the dynamic changes in tea leaves during yellowing. The early stages of yellowing showed increased levels of compounds related to umami and sweetness, while the later stages resulted in darker color and decreased richness in tea infusion, accompanied by significant changes in levels of various compounds.

Results showed that different drying methods produced different effects on the volatile compounds, with VFD method maintaining the shape of fresh BR pieces and HD50 and VD80 methods preserving the color of fresh BR pieces. These findings could provide guidance for the drying and processing of BR tea.

Roasting process shaping the chemical profile of roasted green tea and the association with aroma features

Summary: This study compared the impact of far-infrared irradiation and drum roasting on the chemical composition and aroma of roasted tea, revealing differences in catechins, flavonol glycosides, and volatiles, as well as aroma attributes. The results showed that different roasting processes can lead to distinct chemical and sensory changes in roasted teas, offering a novel approach for flavor chemistry research.

Volatile components and key odorants of Chinese yellow tea (Camellia sinensis)

Summary: This study identified 74 volatile compounds in yellow teas, with geraniol being the most abundant aroma compound. Alcohols and esters were the dominant volatiles, accounting for over 50% of total content. 25 key odorants were identified as responsible for the unique aroma quality of yellow tea, with significant differences in content levels observed among different types of yellow teas.
