Colour evolution kinetics study of spirits in their ageing process in wood casks

Oxygen was found to play a significant role in the volatile profile of aged wine spirits. Samples from alternative aging modalities were distinguished from wooden barrels based on volatile compounds, particularly volatile phenols. Promising sensory results were obtained from samples of the alternative aging process.
